Energy Balls

My all time favourite recipe to make is Energy Balls. The original recipe No-Bake Energy Bites has been taken from here and modified. They take approximately 15 minutes to make and they’ve been the best thing to eat since I’ve become a mom. I usually make a double batch because I eat so much of it.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup ground flax seed
  • 1/2 cup peanut butter
  • 1/4 coconut oil
  • 1/3 cup honey
  • 2 teaspoon vanilla extract

Combine all the dry ingredients starting with rolled oats, ground flax seed, semi-sweet chocolate chips and mix. Then add honey over the dry ingredients, vanilla, and coconut oil. Measure the peanut butter and place it in a separate container (you may do it in the measuring cup/spoon if microwavable). Heat the peanut butter for 15-20 seconds on low until the peanut butter is soft. Pour the soft peanut butter over the rest of the ingredients and mix.

Line the baking tray with parchment paper. Using the ice cream scoop, scoop the mix and do your best to fill the scoop as much as you can. Dispense the scoop onto your other hand and using one hand (or two) squish the ball a bit more and place them on the tray. Do this until you are all done and place them into the fridge (they taste better chilled). It should take about an hour to harden and once they are cold, place them in a sealed bag or container to keep them from drying out. If you want to add more flavour, try including: cinnamon, coconut flakes and walnuts, or anything else you would like in your Energy Balls!
